We started with our big Ilocos Empanadas. Then the neighborhood kids kept asking how much they were. They loved the golden, crispy pastries, but the full-sized empanadas were a little too big and a little too pricey for their pocket money.

So we scaled down the recipe and created Empana-bites — small, affordable treats with savory longganisa flavor and that signature crunch.
